Lemon Basil Pasta Salad
A perfectly perfect salad!
It is:
Perfect for warm weather( no mayo and very light and refreshing ),
Perfect that there is few ingredients, all in which are in their peak flavors at the same time,
Perfect with any B B Q favorite proteins,
Perfectly simple and fast to make.
1 pound farfalle or bowtie pasta
4 plum or roma tomatoes cut in 1 inch dice, I sometimes use grape tomatoes cut in 1/2 but the romas are meater and stand up alot longer
approx 11 large basil leaves cut into chifonade, or more if you like
1 lemon juiced, approx a little more than 1/4 cup
1/4 cup extra virgin olive oil
3 teaspoons salt
fresh basil leaves, for garnish
Fill a large pot about 3/4 of the way with water, add plenty of salt to it and bring to a boil over high heat. Add the pasta and cook 8 to 10 minutes, until al dente.Drain the pasta and rinse under cold water to cool down.
Place the pasta in a large serving bowl and add the tomatoes, basil, lemon juice, olive oil and the salt. Toss well and garnish with the fresh basil leaves. Serve promptly and enjoy!
This would also make a great lite lunch or dinner by adding chicken, steak, crab meat or shrimp to it.
If pasta is too dry for your liking just add more oil/ lemon juice. Easy fix.
