Heavenly Hummus
Why buy store Hummus when it is so easy, (and much better tasting), to make? Not to mention the preservatives that are added for shelf life.
The secret to creamy Hummus is the order in which you add the ingredients to your Food Processor. By the way you must use a food processor!
This recipe can be made with canned Garbanzo Beans or home made from dry. The latter is my favorite, but it does require planning ahead and cooking the Garbanzos.
Serve with fresh veggies, pita bread, or my favorite Lavash, (a thin Lebanese flat bread). Spread on a sandwich is also a good way to enjoy Hummus.
Ingredients:
1/4 cup lemon juice
1/4 cup Tahini (found in international foods isle or Armenian market)
1 clove garlic minced
2 Tablespoon E V Olive Oil
1 tsp. salt
1/2 tsp. cumin
2-3 Tablespoon H2o
1 15 oz. can Garbanzo Beans drained or about 1 3/4 cup made from dry
Process:
1) Combine lemon juice and Tahini in food processor. Turn on and process for 1 minute. Scrape sides and process another 30 seconds or so.
2) Add Garlic, Oil, Salt and Cumin to mixture. Whip 30 seconds. Scrape down sides and whip another 30 seconds.
3) Add Beans and 1 Tablespoon H20. Process 2 minutes. (add more water 1 Tablespoon at a time to reach desired consistency).
4) Transfer to dish and add a drizzle of Olive Oil on top then sprinkle with chopped Parsley!
