I’ve tried quite a few stir fry sauces and somehow they all fell short by lacking a bit in flavor. So I took a few different recipes and tweaked them together to my own liking, the result was and is fantastic! This sauce is packed with lots of flavor and you will want to make it again and again! YUMMY YUMMY!!!

Ingredients:

1 1/4 to 1 1/2 pds chicken cubed ( I like boneless, skinless thighs)

4 green onions sliced (whites only), use the green tops as a garnish

4 cloves garlic, minced

2″ piece of ginger, peeled and minced

2 T. soy sauce

3 T. brown sugar, (or use 4 T. white)

1 T. plus 1 tsp. cornstarch

2 1/2 tsp. salt

2 T. dry sherry

2 T. sesame oil

2/3 cup water

6 cups broccoli florets and peeled sliced stalks (keep stalks and florets separated)

1 1/2 tsp. red chile flakes

2 T. hoisen sauce

3 T. veg. oil

Optional:

toasted sesame seeds

Jasmine rice

Method:

Toss the chicken with the onion whites, 1/2 of the garlic and ginger, soy sauce, sugar, 1 tsp. cornstarch, 2 tsp. salt, sherry and sesame oil. Marinate for about an hour in fridge or 25 min. at room temp.

Now mix the 1 T. cornstarch with 1/3 cup water in small bowl and set aside:

When you are ready to cook:

Have your rice, (if using) already done because this won’t take long! Stick to the short cook times and the broccoli will not get soggy.

1) Heat oil in pan, add broccoli stems and cook for about 30 seconds only,

2) Add florets, rest of the garlic and ginger, 2 T. water, 1/4 tsp, salt and pepper. Stir fry this for about 2 minutes, you want it crisp and green. Transfer this to a        plate.

3) Get the pan hot again in some more oil and add your chicken along with the marinade and the red chile flakes. Fry for about 3-4 minutes (until it loses it’s        raw color).

4) Now add the Hoisen sauce to the chicken along with the plated broccoli. Heat up.

5) Stir the reserved cornstarch mix and add to the pan, stir all together. (If too thick add some more water to thin the sauce).

Don’t overcook, nobody likes mushy broccoli.

Transfer to a pretty dish or leave in pan. Sprinkle the green onion tops over the Chicken and Broccoli along with sesame seeds if using. YUM!
