11- Minute Cauliflower with Sauce
Honestly… this is one of my go-to and favorite veggie recipes ever! It is quick,(you cook in the Micro wave oven!!!), flavorful and the sauce ingredients are something we all usually have on hand. If you think you don’t like Cauliflower give it another try, without drowning it in fattening cheese sauce! Use low fat mayo if you are watching calories or non fat it will still taste great! By the way if you hate Mayo use plain yogurt or sour cream. Also you can use reduced fat cheese.
Ingredients:
1 head Cauliflower
1/4 to 1/3 cup Mayonnaise, (or alternatives as mentioned above)
1 teaspoon mustard
1/2 teaspoon minced onion
1/4 to 1/3 cup grated cheese
Directions:
Place whole head of cauliflower in microwave dish; cover with plastic wrap and cook for 8 minutes.*(if you plan on letting the cauliflower set while you do other preparations cook only 6 minutes as the cauliflower will soften while it sits and waits for you causing it to be too mushy). Meanwhile blend Mayo, mustard and onion in a separate small bowl.; spread on top of the cauliflower. Sprinkle with the cheese and cook another 3 minutes.
