Greek Pita Pockets
Not only is this recipe good but good for you! One sandwich is only 300 calories and very low in fat, give it a try!
1 pound ground turkey
1/2 tsp. of cinnamon or allspice
1/2 tsp. of nutmeg
1/4 tsp. cumin
2 Tbl. lemon juice
1 onion, peeled, halved and thinly sliced
2 cloves garlic, finely minced (or more, to your liking)
1 large ripe tomatoe, peeled and cubed
2 Tbl. chopped fresh mint (or 2 tsp. dried)
1/2 tsp. dried oregano
1 Tbs. choppes parsley
3/4 cup sliced deli-style dill pickles(hamburger chips)
optional: 8 ounces plain low-fat yogurt/ better yet try my Tzatziki Sauce !
3 large pita pockets
Mix meat and cinnamon and nutmeg. Shape into tiny meatballs. Brown in a non-stick skillet sprayed with cooking spray.Drain meatballs in needed. Stir in lemon juice, seasonings, onion, pickle and tomato cubes. Cover tightly and simmer 2 to 3 minutes, just until vegies are heated through but still crisp. Split pita pockets into half moons and open to form pockets. Spoon meat and vegetables into pockets and dollop on yogurt if using.
Makes six servings.
