INGREDIENTS

1 cup pearled barley

1 large bunch Kale roughly chopped

1 Tablespoons roughly chopped Tarragon

1 1/2 tsp. red wine vinegar

2 Tablespoons sour cream

Salt and Pepper

METHOD

Cook barley according to pkg directions. Set aside.

Drizzle some oil into a skillet and heat over med high.Add Kale, season with salt and pepper and cook until slightly wilted. One to two minutes.

Add 1/4 cup water to Kale. Cook 1 to 2 more minutes allowing water to cook off.

Add Kale and the rest of the ingredients to barley. Drizzle with olive oil and mix. Season with salt and pepper too taste.

This is a wonderful side to pork or chicken!
