Toasted Barley Mushroom Bake
Delicious, is all I need to say!
This side goes so well with anything really! As it bakes in the oven it gets a creamy texture and gets a nutty flavor. It is truley one of my favorites.
Ingredients;
3/4 cup pearl Barley
1/4 cup finely chopped onion
8 oz. sliced mushrooms
1/4 cup butter
1 chicken bouillon cube
1/2 tsp salt
1 Tbsp chopped Parsley ( optional)
Instructions;
Preheat oven to 350
1; In skillet cook barley, onion and mushrooms in the butter over low heat, stirring frequently, till the onion is tender and the barley is a golden brown.
2; Meanwhile bring 2 1/2 cups water to a boil.
3; Stir the 2 1/2 cups of boiling water into the skillet along with the bouillon cube and 1/2 tsp salt.
4; Pour into a 1 quart casserole dish and place in oven.
5; Bake uncovered for one hour stirring once or twice.
6; Stir in parsley.
