Falafel Patties
Falafel is a popular Middle Eastern food that is made of seasoned pureed garbanzo beans,(or chickpeas), that are formed into balls and deep fried to be placed in Pita Bread. This version is formed into patties and lightly pan-fried instead . You will need a food processor for this recipe.
INGREDIENTS:
2 garlic cloves, roughly chopped
1 (15 ounce) can garbanzo beans rinsed and drained
1/4 cup flour
1/4 cup fresh parsley leaves
2 Tablespoons tahihi (sesame seed paste, found in international isle at grocery store)
1 tsp. baking powder
1 tsp. cumin
1 1/2 tsp grated lemon rind (zest)
1/2 tsp. salt
1/2 tsp. pepper
2 Tablespoons olive oil
Tzatziki SDauce
Place all ingredients except oil and Tzatziki in a food processor: Process until garbanzo beans are finely ground, (if needed add a few drops of water).
Shape mixture into 4 patties.
Heat oil in large nonstick skillet over medium high heat. Add patties and cook about 4 minutes on each side or until browned.
Serve in Pita Pockets with Tzatziki Sauce or in in large lettuce leaves if watching your bread intake.
One serving around 300 calories, depending on lettuce or bread and amount of sauce.
