Mashed Cauliflower
I love this as a side dish! It is my go to to replace mashed potatoes,( which really have no nutritional values and are high in starch and carbs).
It is a bit sweet and goes well with anything you would serve mashed potatoes with. I use an immersion blender with this but I guess a food processor or hand mixer would work just as well.
Ingredients:.
1 head cauliflower florets
2 Tablespoons butter (or to your liking)
1/4 cup milk (I use almond but that’s because we don’t drink cows milk)
1 tsp.salt and pepper
Zest of 1 lemon (optional)
1/4 cup Parmesan cheese (optional)
1) Boil cauliflower florets in about 2 -3 inches of salted water using a stock pot until tender. Using a stock pot helps to cook cauliflower evenly and you can reuse pot for mashing instead of dirtying another bowl.
Do not cook until mushy or your finished product will be watery!
2) Drain cauliflower well and toss back into pot.
3) Add the rest of ingredients to the cauliflower.
4) Blend until smooth and creamy. Add more milk if needed and taste to make sure there is enough salt and pepper.
Serve warm with your choice of protein!
This dish holds well if made ahead of time and reheated in the microwave!
