Fresh Mozzarella, Tomato,and Basil, Couscous Salad
Fresh, light and delicious! Perfect with Chicken, Fish, or any BBQ side!
Ingredients;
2 cups diced tomato, seed removed
1 cup diced fresh Mozzarella, about 4 oz.
3 Tbsp minced shallots, or red onion
3 tsp EV Olive Oil
1 tsp lemon juice plus zest of 1 lemon to put in at end of recipe
1/2 tsp salt and 1/4 tsp pepper
1 clove garlic crushed and finely minced
1 1/4 cup chicken broth or water (broth adds more flavor)
1 cup uncooked couscous
1/4 cup chopped basil or more to liking
Directions;
- In a large bowl combine all ingredients from above up to the broth/ water. Except Lemon Zest we will use that later
- In a sauce pan bring chicken broth up to a boil. add the couscous and stir to combine. Quickly remove from heat, cover and let stand about 10 minutes.
- With a fork, fluff the couscous and let cool
- Add cooled couscous, zest of lemon and chopped basil to tomato mixture
- Adjust salt if needed. Might need a little more lemon juice? Then add it!
